Grapefruit & Chinese Five-Spice Cordial

6 grapefruit peels
6 cups organic sugar
1/8 cup Chinese five-spice powder
4 cups water
8 ounces 151-proof rum

Muddle grapefruit peels with 2 cups sugar and allow to sit at least 2 hours to make oleo-saccharum, an oily syrup. Add the syrup to a pot with the five-spice powder, 4 cups water, and remaining sugar. Bring to a boil, then simmer for 20 minutes. After the syrup cools, add the rum and fine strain through a chinois. Tastes best after sitting for a day.
