This is the gastronomic experience at Somni, the inventive new tasting menu restaurant from José Andrés and Aitor Zabala at the SLS Beverly Hills Hotel. With a name that means “dream” in Catalan, Somni is an interactive, constantly evolving culinary event. “It’s not about extreme combinations, but the ability to create a flow of simple and more complex dishes that together create a whole experience,” says Chef Zabala. “I’m over the term ‘molecular gastronomy.’ For me there are only two types of food, good and bad, and we make good food.” $235 per person; 310-246-5543; exploretock.com/somni
