The Perfect Pisco Sour

2 ounces pisco
1 ounce fresh lime juice
1 ounce simple syrup
1/2 egg white
Angostura bitters

Combine all ingredients except bitters in a cocktail shaker with ice. Shake vigorously for at least one minute to fully emulsify egg white. Strain into cocktail glass. Garnish foam with two or three dashes of bitters.
