Two Peas in a Pod

“This drink is light in body but robustly flavorful at the same time. The snow peas give it a vibrant green color and the characteristics of sweet celery. For clarity in the drink’s final appearance, I use Qui Platinum Extra Añejo Tequila, which uses a filtration process that results in a clear color, whereas extra añejos are typically dark. 1/4 ounce honey syrup (recipe follows)
1-1/2 ounces Qui Platinum Extra Añejo Tequila
3/4 ounce snow pea juice
1/2 ounce lemon juice
1/4 ounce Lillet fortified white wine or dry vermouth
orange twist

Combine 1/4 ounce of the syrup with all other ingredients except the orange twist into a shaker and fill with ice. Shake for 10 seconds and double strain into a martini glass. Garnish with the twist.

HONEY SYRUP

3/4 ounce honey
1 ounce hot water

Mix honey with hot water. Stir or shake until dissolved and allow to cool.
